What’s Included:

Protein: 2x 400g premium veal shanks (osso buco cuts)

Vegetables (Soffritto Base): 2 medium carrots (chunked). 2 celery stalks (chunked). 2 medium onions (chunked). 4 garlic cloves (whole, unpeeled). Fresh rosemary sprigs (3). Fresh thyme sprigs (3). Fresh parsley (large bunch). 2 bay leaves

Liquids & Sauce: 300ml dry white wine (dry white Pinot or similar). 400ml canned crushed tomatoes (San Marzano preferred). 400ml beef or veal stock. 1 can tomato paste (small – 30g). Lemon zest (2 tablespoons)

Gremolata (Fresh Finish): Fresh parsley (fresh bunch). Fresh lemon zest. Garlic cloves (2-3 minced fresh)

Seasonings: Sea salt and cracked black pepper. Flour (for dredging veal shanks). Olive oil (for browning). Butter (for finishing)
